High Spirits’ new location in the Centennial Building will not only provide much more space for the purveyor of wine, beer and spirits to stock their wares, but it will also mean opportunities for education and events as well.

“Our whole building was really designed to kind of tell a story,” said Peter Crabtree, owner of High Spirits, Chocmo and Crabtree Kitchen + Bar. Once completed, all three ventures will be located within the newly constructed Centennial Building in Poulsbo.

“It’s kind of about paying homage to our last 100 years and looking forward to the next hundred years,” Crabtree said. “In designing the building, picking out the materials, we really wanted to reuse different parts and pieces from the community.”

All of the paneling at High Spirits, Crabtree said, was sourced from old barns that were torn down in Keyport. The lumber was sawn by the Smythe Mill and used to decorate the space.

The new location features a sprawling variety of liquors and a ladder on tracks, which can reach the higher shelves of additional spirits kept on the walls similar to a library. The space will also include a growler refill area, a 1,000 square-foot beer cave, a 3,000 square-foot wine cellar and an educational space that can double as a small event venue.

“We stock thousands of products. We have tons of unique stuff that you won’t find anywhere,” Crabtree said. “We have knowledgeable staff that’s really able to help people shop for things that are going to fit their palate.

“We’re a place to come in and explore, and learn and talk about different products, and we really have a staff that’s passionate about learning about the products and continuing to explore them as well.”
