When the owner of Dippity Donuts decided to close its door at the end of October, Lois Sietman came in and took over from where the previous owners left — along with some changes.

Since Nov. 1, business has been booming at Nostalgia House Bakery and Deli.

“She closed on Tuesday, we took over on Wednesday,” said Sietman, owner of Nostalgia House. “There was no interruptions of services at all. We basically just walked in and started doing business.”

Sietman said while the former company baked donuts on site, Nostalgia House donuts are made at the Red Apple Bakery at Kitsap Lake.

“We lease the grocery store’s bakery,” said Sietman. “We do our donuts there, along with a lot of our baking and breads.”

She said the Kitsap Lake store makes between 50 and 75 dozens donuts each day.

Sietman said her business is a full-service bakery that can make cakes, cupcakes, cookies, muffins and other bakery items — all from scratch.

“We are slowly bringing new things in and getting our stock built up,” she said. “But maple bars are the most popular among bakery items.”

Since Morningside Bread and Pastries Co. closed earlier this month, Sietman has been an increase in business.

“You never want to see a business close, especially when they have been in business for a long time,” she said.

Sietman, who also provides catering service, said she is looking in providing wholesale service for the area.

The 55-year-old baker has spent most of her life in Kitsap County, has been in the food services business for 35 years — mostly as a baker. She worked as a pastry chef at the Washington State Convention and Trade Center in Seattle for more than eight years.

“We did party from 50 to 5,000 people,” Sietman said.

Beside bakery and bread items, the deli has homemade soups and specials every day, also all made from scratch.

“We also do different types of sandwiches, but not the run-of-the mill-stuff,” Sietman said. “We’re doing like dill chicken salad, egg salad and meatloaf. We found they sell better than just plain turkey and ham.”

She is using social media to notify people in the area about her items and upcoming specials. Sietman said she is taking requests on Facebook.com.

“We’re running different specials, but we are alway looking for ideas,” she said. “We’re customer-oriented. What the customers say they want, we’ll do it as long as it’s worthwhile.”
