Spinach Pie – Spanakopeta
This is an easy recipe for this popular Greek dish. I often make it for lunch — just add a green salad and crusty bread or rolls.
Ingredients:
1 package of frozen spinach
1/2 medium onion finely chopped
1 clove garlic finely chopped
1 tablespoon butter
3/4 cup cream sauce
2 large eggs, beaten
1/2 cup feta cheese, crumbled
salt and pepper to taste
dash of nutmeg
6 sheets phyllo pastry
melted butter
Method:
Melt 1 tablespoon of butter in a large skillet. Add onion and garlic and saute until soft.
Add thawed spinach and saute an few minutes longer. Remove from heat and cool.
Add cream sauce, eggs, salt, pepper and nutmeg. Mix well.
Cut each sheet of pastry in half. Carefully separate the sheets. Layer 6 half sheets in a 9 x 12 inch baking pan, spreading each sheet with melted butter.
Spread spinach mixture evenly over and sprinkle feta cheese over all.
Layer remaining phyllo sheets over, spreading each with butter.
Bake in a 350F oven 30 minutes. Cut in square to serve.
