POULSBO — The Fat Apple Bakery and Cafe is the latest place to stop for breakfast, lunch or a special order in downtown Poulsbo.
Fat Apple opened at 18996 Front St., in the space formerly occupied by Liberty Bay Bakery.
Fat Apple serves breakfast and lunch, including “Grab and Go” lunches.
All of Fat Apple’s treats are made from scratch, including the house-made sausage and artisan bread.
Owner Barb Wilson has baking in her blood. At the age of 14, Wilson made a silver-white cake with French silk frosting and she was hooked.
She went on to a career in the culinary arts, including a stint with award-winning chef Kevin Binkley.
“I had the chance to work with some amazing chefs during my tenure in Phoenix, but the most influential was Kevin Binkley of Binkley’s in Cave Creek,” Wilson said.
“I worked with him at three different restaurants over the course of eight years, but my time at Binkley’s forever etched into me some very high standards. His restaurant and reputation have soared over time and I feel grateful that I was able to work with someone who showed me a level of perfection I would not have attained anywhere else. He has been a finalist four times in as many years for a James Beard award and I’m proud to call him a mentor as well as friend.”
Custom orders are available for specialty and wedding cakes, boxed lunches and treats.
Fat Apple has something for everyone, Wilson said: drip coffee with pies, tarts and cookies; artisan bread served with made-from-scratch breakfast and lunch; and treats available with gluten-free options.
Fat Apple has seating for 40-plus people, so patrons can sit and chat with locals and folks from out of town.
