The Kitsap Public Health District recently released inspection scores for restaurants across the county.
Each year, more than 1,000 permanent food establishments are inspected twice.
“The purpose of our inspection is to assure that food is being handled properly — from preparation through serving,” states the Kitsap Public Health District website. “Our inspectors observe kitchen workers’ food handling practices, inspect refrigerators and storage areas, take food temperatures, and make sure that workers use correct hand washing practices.”
There are two levels of food safety violations: red and blue.
Red violations are likely to “directly contribute to food contamination or foodbourne illness.”
Examples of such violations include improper cooking, cooling, refrigeration or reheating temperatures and poor temperature control.
Those errors must be corrected during routine inspection.
Blue violations are reflective of conditions that have a low risk of transmitting foodbourne illness.
Examples of blue violations include lack of facility cleanliness and maintenance or proper cleaning of equipment and utensils.
A score below 92 percent means the establishment needs improvement, according to Kitsap Public Health District standards.

There are seven restaurants in need of improvement:
Beachfront Martini Lounge on NW Bucklin Hill Road in Silverdale
Score: 88.75 percent — Violations included improper hot holding temperature (less than 130 degrees); improper cold holding temperatures and incorrect dishwashing or sanitizer.
Down East Fish & Chips and Teriyaki Inc. on NW Randall Way #101 in Silverdale
Score: 93 percent — Violations include improper cold holding temperatures. Presence of pests not effectively controlled. Food contact surfaces unclean, as well as nonfood contact surfaces. Inadequate plumbing.
Fiesta Mexican Restaurant on Silverdale Way in Silverdale
Score: 90.50 percent — Violations include improper cold holding temperatures; thermometers not used to check PHF temperature. Raw or undercooked foods not identified. Inadequate equipment for temperature control. Presence of pests not effectively controlled. In-use utensils not properly stored.
Gandhi India Cuisine and Lounge on Mickelberry Road NW in Silverdale
Score: 90 percent — Violations include raw meat contact surfaces not sanitized; improper cold holding temperatures. Thermometers not used to check PHF temperature. Presence of pests not effectively controlled.
Hakata Restaurant on Myhre Place Suite 108 in Silverdale
Score: 83.75 — Violations include improper shellfish ID, fish parasite destruction. Improper use of time as a control. Incorrect dishwashing or sanitizer. Bare hand contact with foods.
King’s Wok Buffet on Silverdale Way
Score 88.75 — Violations include improper shellfish ID, fish parasite destruction. Improper hot holding temperature less than 130 degrees F). Improper use of time as a control. Improper cold holding temperatures.
Silver City Brewing on NW Myhre Road in Silverdale
Score 91.25 — Violations include improper cold holding temperatures, bare hand contact with RTE foods.
