Who would know that right here in our very own community, on the pristine hillsides overlooking Port Gamble, is this gem of a natural resource for healthy steaks, roasts and burgers. When I think beef cattle, I think Texas or Wyoming, but not Kitsap County. Sure, I see horses and llamas and some sheep — those are people’s pets. But cattle raised for beef consumption and sold right here — it just didn’t seem possible without muddy feedlots, flies and drugged up cows.
Teves says his family raises only a very limited amount of natural grass-fed beef cattle, with no hormones, no antibiotics and no steroids added. “We limit the amount of cattle raised so that the pastures are not overgrazed and the cattle have enough of the rich spring and early summer grasses to feed on. We have to be good stewards of the land in order to produce healthy cows for our discriminating clients — people who like their steaks but want to eat healthy as well.”
According to CNN Health: “The local health and environmentally conscious movement has been singing the praises of the grass-fed cow, while the grain-fed industry has been under attack by food activists.”
“The grass-fed cow, which eats from a pasture and is not ‘finished’ on a diet of grains and supplements for rapid weight gain, is said by its promoters to be better for the planet (less energy goes into growing grass than grain), better for the beef eater (less overall fat, and more omega-3s and other good fats), and better for the cow (critics decry feedlot practices as inhumane).
“A study by researchers at California State University in Chico examined three decades of research and found that beef from pasture-raised cows fits more closely into goals for a diet lower in saturated fat and higher in ‘good fats’ and other beneficial nutrients. Grass-fed beef is lower in calories, contains more of the healthy omega-3 fats, more vitamins A and E, higher levels of antioxidants, and up to seven times the beta-carotene. “Buying beef directly from farmers not only is a logical next step in the ‘buy local’ movement, but also hearkens back to the way many of our parents or grandparents bought meat.”
